Straining is a simple yet important technique for separating liquid from solid food. A ‘strainer’ is a plastic or stainless steel bowl with holes in it so that the water can flow through. Stocks, or pasta in water, or anything that you have boiled must be strained. Now, we can’t allow a great thrifty opportunity to pass by, so here it is: save your strained-off vegetable water for washing dishes or pots and pans. Or, use strained-off vegetable water as a base for a soup or stock.
